How do they make those beach fries
taste so good?! Here's the recipe:
6 fresh No. 1 Idaho Russet Burbank
potatoes, medium size
2 teaspoons white vinegar
Refined Peanut oil
Old Bay Seasoning
With a knife or fry cutter cut peeled
potatoes into long shapes with ¼ square inch thick. Place them into
a bowl of cold water. Add vinegar and swirl potato pieces. Put in the
refrigerator still in the bowl for one hour. Swirl potatoes again and
pat dry on paper towels.
Cooking:
In a large heavy pot or deep fryer
preheat peanut oil to 315 degrees F. Add two cups of potatoes at a
time and cook for 5 to 7 minutes. Remove from cooker and shake off
oil. Drain on layer of paper towels. Place in refrigerator for at
least one hour. Better yet leave in refrigerator over night. Then fry
again.
Second Fry
Reheat oil to 375 degrees F. Fry the
potatoes for 4 minutes or until crispy and golden. Shake off oil and
drain excess by placing fries on paper towels for one minute.
Sprinkle with Old Bay Seasoning instead of salt. Serve in paper cup
and douse generously with apple cider vinegar
