Best Oil For French Fries

After the potato, the oil is has the most effect on how the french fries taste when done. The best oil has a high smoke point and doesn't impart ugly flavors to the french fries. An oil with a high smoke point won't smoke as readily when heated in a deep fryer. It is best to use fresh oil with each batch of french fries you cook.

Beef Tallow
At one time beef tallow was thought of as the best oil to cook french fries in but concerns about health risk caused it to fall into disuse.


Vegetable Oil 

Because it is high in healthy unsaturated fats vegetable oil is now the preferred french fry oil in most kitchens. Most commercial kitchens use vegetable oil derived from soy oil for the same reason. It has a mild flavor and a high smoke point. 


                                                                           


Canola Oil

Canola oil, invented in Canada, is the second most commonly used oil in commercial kitchens for french fries. It gives a more noticeable taste and odor to fried foods than peanut oil, but it is much easier on the body health wise. It is high in monounsaturated fat and includes omega-3. 


                                                                 

Refined Peanut Oil

Refined peanut oil gives the fries a nutty flavor and a pleasant aroma. It has resveratrol, also found in the skins of grapes.
